Step 1
Preheat oven to 200°C. Spray the sweet potatoes with oil. Wrap each sweet potato in foil. Place on an oven tray and roast for 45 minutes or until tender.
Step 2
Process the butter and milk in a food processor until soft and pale. Add the seasoning and process until well combined.
Step 3
Use a small sharp knife to make a slit lengthways in the top of each sweet potato. Fill with the butter mixture and top with coriander sprigs.
