  • 1 tablespoon olive oil

  • 1 pound ground beef, 80% lean

  • 1 medium yellow onion, diced

  • 1 tablespoon tomato paste

  • 2 teaspoons garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoons sea salt, more to taste

  • 1 teaspoon freshly ground black pepper

  • 2 tablespoons all-purpose flour

  • 1 tablespoon Worcestershire sauce

  • 1 cup beef broth

  • 1 (14.5 ounce) can diced tomatoes

  • 8 ounces shredded cheddar cheese, divided

  • 4 cups frozen tater tots, about 16 ounces

  • 2 teaspoons finely chopped fresh parsley, for garnish

  • 1/2 cup favorite mustard, for serving

Description

  1. Position a rack in the center of the oven and heat to 400 F.
  2. Heat the oil in a large cast-iron skillet or other large heavy-duty oven-proof skillet over medium-high heat until it shimmers.
  3. Add the ground beef and onion, and cook, stirring frequently and breaking up the meat with a wooden spoon until it is crumbled, no longer pink, and the onion is translucent, about 8 minutes.
  4. Drain all fat from the skillet.
